West Arsi is a region that only recently gained its independence as a growing region, previously categorized as Sidama. The coffees that come from West Arsi are known for their fruit-forward profiles. Kassim, the owner of this washing station is credited with putting a spotlight on the region for the cup quality of his coffees that has been recognized at the 2020 Cup of Excellence. This station serves nearly 200 smallholder producers who have less than 2 hectares on average. The Kurume variety in this lot comes from the forests of Yirgacheffe, and is popular among farmers throughout Yirgacheffe and Guji for its cup quality. The other variety in this lot, Wolisho is a local landrace identified for its quality and prevalence, originating in the highlands of Ethiopia. Kassim processes mostly Naturals at this station, but we’re lucky to have come across this Washed lot. Once delivered, cherries are dried for 16-19 days on raised beds. Data collection throughout processing, monitoring things like temperature, PH, and humidity have helped improve quality year over year.
